Pudina ~ Dhania ~ Bimbul Green Chutney.

Pudina (Mint Leaves) ~ Dhania (Coriander Leaves) ~ Bimbul Green Chutney…. A healthy green chutney that’s a great accompaniment for dosa, idly, appo, kababs, paratha, cutlets, sandwiches, toasts or even as dips …… I sometimes apply it on cream cracker diet biscuits and enjoy the taste ….. Yumz .....

Green leaves are available almost through out the year in Mumbai. Though during season they are available in abundance. However I had brought bimbul from Mangalore and I wanted to prepare this green chutney with the addition of the same. So prepared this delicious and healthy green chutney and enjoyed it in sandwiches of egg and potato. This has a strong pudina aroma as I added more of pudina than coriander leaves for a change. Wanted to get that minty taste for a change. In all a very healthy that can be had with any dishe of your choice. I prepare this and keep it in the fridge immediately, lasts good for 3 days. It does come handy.

Ingredients :
Coconut : 1 cup freshly grated white part.
Pudina (Mint) Leaves : 3 cups packed tight ~ leaves only ~ chopped.
Dhania (Coriander) Leaves : 2 cups packed tight ~ leaves and tender stems ~ chopped
Bimbul : 6-8 large sized cut to pieces.
Green Chillies : 8-10 cut to pieces.
Ginger : 1 inch piece cut into pieces.
Jaggery / Gud : Small marble sized (Optional)
Salt to taste.

The leaves mentioned above should all have been cleaned, picked, washed and then chopped. Take all the ingredients and put it in your blender / mixer grinder and grind to a smooth paste with 1 cup of water. Do not add much of water as the leaves have lots of moisture content in them. Mix well in between grinding and further grind till you get all evenly ground into a smooth and nice paste.

You can increase / decrease the amount of chillies added to the chutney depending on how spicy you want the chutney to be. Also you may leave out the jaggery / gud piece as per your liking. But it does give a khatta meetha teekha taste if added on and specially with sandwich it goes well. The chutney is ready to be served. Serve the Pudina ~ Dhania ~ Bimbul Green Chutney with any dish of your choice. They go very well with dosa, idly, appo, kababs, paratha, cutlets, sandwiches, toasts or even as dips …… I sometimes apply it on cream cracker diet biscuits and enjoy the taste.
