Microwaved Spicy Bhendi Kurkuri-2.


Here is Bhendi Kurkuri-2 / Microwaved Crispy And Spicy Lady's Finger with Spiced Masala-2 ............ A Very Healthy Version as I have used oil very sparingly ......


Recipe is almost the same as the one I posted some months back of Bhendi Kurkuri-1 with very minute changes. Here I had added some extra spices and rice flour too. Again another healthy crispy version of bhendi prepared on Microwave. Indeed simple to make, also these are very very crispy and tasty to munch on without any guilt. They remain crispy too throughout the day. 


Wash, wipe dry and cut into thin strips about 250 gms of bhendi. I make lengthwise 6 strips of each bhendi if the bendi is thick or 4 strips if slimmer. Depends upon the thickness of the bhendi. Put them in a large flat bowl. Add in salt as per taste. 4 tblsp of besan (gram flour), 2 tblsp rice powder, 2 tsp of red chilli powder, ¼ tsp of hing powder, ½ tsp fennel powder, ¼ tsp coriander powder, ¼ tsp jeera powder, 1 tblsp of vinegar and mix well. Sprinkle 2-3 tblsp of water, add 2-3 tsp of any refined oil and mix well. They should somewhat coat each strip of bhendi evenly.


Put the prepared masala bhendi in a microwave shallow glass plate that has been oiled well and spread the prepared bhendi’s in a single layer. Take care to see that you put them in a flat single layer and not overcrowd or topple them on in the plate. Microwave on high till crispy and done at 5 minutes intervals each time. At every five minutes when the oven stops, turn over the bhendi, they will have stuck to each other, do not worry they will separate once they become crispy. Now start the machine again. 


It took me a good 22-24 minutes. But then the timings differ from oven to oven. So once you cross 20 minutes run the machine at the interval of lesser timings to ensure that you do not burn it. Once the bhendi’s turn crispy and evenly browned, just leave the bhendies in the oven itself. They will further cook and remain crisp for a long time. Put them in a tight lid steel dabba / box. Crispy spicy masala bhendi is ready to be served.
