Sweet Chilly Garlic Sauce.


Sweet Chilly Garlic Sauce ........ made from fresh red chillies .......


Thanks to Debadatta Roy for this recipe. I have made only some minute changes.


This is a sauce that is sweet, spicy and tangy with a garlic flavour .... that will enhance any meal …. You can have them with kababs, tikkas, fritters, crackers, goat cheese or cream cheese ….. also use it as dipping suace ..in marinades, salad dressing. The sweet taste is offset with that spicy hint which makes it a great combo. This one is an amazing substitute for the regular ketchup.


Ingredients :
Pulpy fresh Red Chillies - 8
Vinegar - 1 cup
Sugar - 1 + 1/4 cup
Garlic – 30 cloves 


Slice of the stem part of the chillies and slit them vertically. Remove the seeds and preserve them. Cut the chillies into pieces. 



Peel the garlic and chop to fine pieces and keep it ready.


Put the chillies in small mixer grinder and pulse / grind to a semi coarse paste. You can grind it smooth if you like it that way. I ground it to smooth paste adding a little bit of vinegar. 


Add the pureed red chillies along with the preserved seeds into a heavy bottomed pan. Add in the Vinegar and sugar. Mix well and cook on medium heat till bubbles appear. 


Lower the heat to minimum and cook till it is semi thick. Stir occassionally to avoid the sauce getting burnt or sticking to the bottom. The cooking process takes about 13-15 minutes only. Do not continue to cook further as the sauce thickens while it cools. However, if you like jam consistency, you can cook for another 2 minutes.


The awesome sauce is ready. You will get about one cup full of sauce. Cool and store it in a sterlized bottle. As I have mentioned above you can serve this with any meal you wish. But goes well with starters. As for amchies this goes very well with poori and our famous Tandla Oondi. Try this, I bet you will never buy readymade one’s.


** Note :
** You can increase the no. of chillies if you want it spicier, but try before with same measurements for the first time and then add or minus the spice content depending upon your liking. 

** You can cut down the amount of garlic too, infact the recipe mentioned half of what I have added. I included more as I like garlic flavour. 

** This sauce is prepared by using fresh red chillies only. You cannot use dried variety.
